Try this herby salsa verde
 
20g fresh mint
30g fresh parsley
30g fresh basil
2 cloves garlic
2 tbsp capers
25g sunflower seeds 
2 tbsp Aspall white wine vinegar
100ml extra virgin olive oil
 
Wizz altogether in a mafimix or pestle and mortar. 
Drizzle over veg soup or on roasted veg or dip some crusty bread into it.
 
Save your bottles! I will bring a funnel and the vinegar to decant into your bottle.
